Caesar Dressing

  • 3 ½ oz. Anchovies
  • ¼ onion (diced)
  • 1 ½ tsp. Garlic
  • 3 egg yolks
  • ¾ cup red vinegar
  • 1 ½ tsp. Dijon
  • juice of ½ lemon
  • ½ tsp. Worcestershire
  • 1 ½ tsp. Black pepper
  • 3 cups olive oil

Combine all ingredients except oil in a blender. Mix well and slowly add oil to emulsify dressing.
